You shelled out a pretty penny for your Easter ham, don’t just wrap up the leftovers and stick them in the fridge where they’ll get lost in the back until it’s time to throw them out. I love planning meals for the week after a holiday because I know my grocery bill will be on the light side thanks to being able to incorporate leftovers delicious, new meals.

I have two favorite go-to post-Easter meals. The first uses the ham as well as a few potatoes, which are pretty inexpensive usually. Its this Ham and Scalloped Potatoes. Not only is it a great way to use up leftover ham, it’s a one-skillet meal that’s ready in under 30 minutes. The recipe calls for Velveeta, I’ve always used American cheese, but choose whatever creamy, melty cheese you like.
To use up both ham and veggies, try this Tortellini Primavera from the Pioneer Woman. It’s so delicious, and easy adaptable to whatever leftover veggies you have–asparagus, carrots, broccoli, you name it. If you have cooked veggies leftover, just chop them up and stir them in at the end to warm them up. You can either keep all her veggie ideas and add yours or swap out some of yours for hers, it’ll be good no matter what you do.
